A chemical evaluation of Gnetum africana and Telferia occidentalis was carried out in five randomly selected restaurants in Calabar. The results showed that both Gnetum africana and Telferia occidentalis soups have high caloric values and contain adequate levels of essential minerals, vitamins, amino acids, proteins, and fat, which are needed for a variety of cellular functions in humans, and which would reduce the problem of protein energy malnutrition (PEM). © 2009 Taylor & Francis.
